Inadequate Cooling and/or Refrigerated Storage of Potentially Hazardous Food(s)

Chicken on a baking tray measured 21 degrees C. Broccoli soup measured 31 degrees C and sausages measured 41 degrees C. Cod and hamburger in the small refrigerated unit measured 18 degrees C. These foods were all discarded at the time of inspection. The refrigerated drawers under the grill meansured 10 -13 degrees C. This is not acceptable. Potentially hazardous foods must be maintained at 4 degrees C or colder at all times. Immediate corrective action is required. Tempeature montioring and recording must take place throughout the day.

Inadequate Hot Holding of Potentially Hazardous Food(s)

Hollandaise sauce measured 50 degrees C and vegetable stock measured 40 degrees C. This is not acceptable. Potentially hazardous foods must be maintained at 60 degrees C or hotter. Hot holding temperatures must be monitored throughout the day. Immediate corrective action is required.

Improper Cleaning, Sanitizing of Equipment and Utensils

Knives were being stored in a container of sani-water in the preparation area. This is not an acceptable food handling practice. Knives and other utensils must be cleaned and sanitized after use or must be stored in a manner that precludes bacterial growth - either at 4 degrees C or colder or 60 degrees C or hotter. Immediate corrective action is required.

Mouse droppings were noted. All rodent excrement must be removed. Rodent abatement strategies must be increased. General sanitation must be improved.

General sanitation in this establishment is poor and must be improved. Thorough cleaning is required in all hard-to-reach places such as under, behind nd between equipment. A flashlight or additional light source is to be used to illuminate dark, hard-to-see areas when cleaning.
